decades on, Tasmanian Truffles has become the country’s premier producer of fine black truffles. Henry was by his father’s side the day he unearthed the first truffle. Discovering that “fragrant diamond” in Tasmania’s fertile soil sparked a new generation of passion and today Henry manages Tasmanian Truffles with his sister and best friend, Anna. It is Douglas the Labrador (aka Chief Hunter) who knows when the truffles are just right. This much-loved family member is well attuned to the aromatic moment of unearthing. Each truffle is delicately collected by hand, with care worthy of an ingredient celebrated the world over. Find them at Salamanca Market, Hobart or visit them on the Web |
